Homemade Beef & Noodles

My mother was always a complete rock star with Beef and Noodles. It was like the signature dish that we ate for nights on end (voluntarily) afterwards until every last morsel was gone. So, with some tips from her and my good old friend Pinterest I gave it my best shot!
First up - Noodles! For many many years I heard about people taking all day to make noodles and quite frankly I thought it was a much more in-depth process than it really is.
3 eggs
3 cups of flour
1 teaspoon salt
Water to bring to the correct consistency (around 1/2 cup)
After I mixed all the ingredients (and I should say that while you are mixing it is helpful to have a mixer with a bread hook) I rolled them on to my kitchen table and used a pizza cutter to cut all the strips. I allowed them to dry for around 3-4 hours before placing them in a bag and into the freezer.
The next day I placed a package (1-2lbs) of beef stew chunks into the crock pot, with beef stock, and two packages of onion soup mix and allowed it to cook for about 6 hours on high. Once cooked I cooked the noodles in the broth of the beef and cooked down the liquid until it was thicker. With a little extra garlic salt and salt and pepper it was ready to go!
So, all in all an epic success - I hope to make this dish again, I might need to double it for more leftovers, there weren't any this time!
